Pistachio, Coconut and Cranberry Energy Balls

Healthy snack options made from natural ingredients are great when restoring balance to your diet, especially if lots of sugary snacks have been a feature until now.


Energy Balls are easy and quick to assemble. You can experiment with the ingredients and change to suit your taste. For example, instead of pistachio nut butter, you could use cashew or almond butter. If you don't have Maple syrup, you could use honey.



Ingredients

  • 100g pistachio nut butter (I use 100%)

  • 100g Maple syrup

  • 50g desiccated coconut

  • 50g oatmeal

  • 25g sunflower seeds, roughly chopped or whizz quickly in a food processor

  • 25g cranberries

  • Optional: 50g white chocolate chips and

  • extra desiccated coconut, for coating


 

  1. Put the nut butter and maple syrup in a medium saucepan and stir over a low heat until combined.

  2. Remove the mixture from the heat and stir in the coconut, oatmeal, sunflower seeds and cranberries. Mix everything together until thoroughly combined. Set aside for five minutes to completely cool.

  3. If using, add the white chocolate chips.

  4. Using a teaspoon scoop the mixture out and roll between your palms to form a ball. Coat each ball in the extra coconut, if desired.



Store the Energy Balls in a sealed box in the fridge and you can enjoy them for up to a week.
